Fire Cider No-knead Bread
- 440g Bread flour
- 350g Lukewarm water
- 25g Fire Cider
- 10g Salt
- 7g Instant yeast
- Extra flour for dusting
- Parchment paper
- Dutch oven
1. Mix dry ingredients, add wet ingredients

2. Mix until moist sticky dough forms

3. Cover and let rest in warm, dry place for 30 minutes (target proofing temp: 75°-80° F)

4. After 30 minutes, stretch then fold your dough. Rotate your bowl and repeat stretch and fold for a total of 4 times. Do 4 sets of stretch and folds in 30 minute increments. (This part isn’t necessarily needed but it helps strengthen the gluten structure so you have a fluffier bread)
5. Let proof for at least 4hrs and up to 12hrs in warm, dry place. Longer proof time = more flavor
6. Dust your work service with flour. Shape dough into a ball with the seam on the bottom.

7. Place on floured parchment paper, cover, then let rest for another 45mins to 1hr.
8. Preheat your oven to 450° with dutch oven (and lid) inside
9. When ready, place parchment sheet with dough in the dutch oven. Use scissors to cut a seam on the top and dust with a little more flour.
10. Bake for 30mins with lid on then another 12mins with lid off.
11. Place on cooling rack and let sit for at least 2hrs then enjoy!
